Baked Avocado with Ham Steak or Irish Bacon
Creamy baked avocados scream for eggs, and in this recipe, the addition of your favorite pork product. Add Ham Steak or Irish Bacon for breakfast, lunch, or dinner for the perfect and fun meal. Top with your favorite herb to pull it all together.

Directions

1 - Cook your Ham Steak- Either cook in a pan on the stovetop with some ghee or butter or set your oven to Broil and flip halfway through. The internal temp should be 140 degrees. Be careful not to overcook.


OR 1 - Cook your bacon with one of the same methods. If you re-bake it, be careful not to overcook.


2 - Heat oven to 425°F. Cut the avocados in half and remove the pits. Scoop out a little flesh larger than the pit size to create a bigger well. To keep the avocados from toppling over, either set into a small dish or slice a thin layer of the skin off, creating a flatter surface.


3 - Place the avocados on a baking sheet.


4 - Put slices of the bacon into each cavity if using.


5 - Crack one egg into each cavity.


6 - Season with salt and red pepper flakes.


Bake for about 15 minutes, or until the egg is cooked to your liking. Garnish with your favorite fresh herbs


You can remove some of the egg white before baking to avoid spilling over.
