The most tender beef cut! It's also known as the tenderloin. It's Lean yet succulent and elegant and has a melt-in-your-mouth texture, subtle flavor, and compact shape.


As with all the beef we offer, it has zero artificial preservatives, is pasture-raised, dry-aged, and we never use hormones, steroids, or antibiotics.
