The most tender beef cut, hands down. Your Filet Mignon is cut from a portion of the whole tenderloin, but this cut is not in a steak form like Filet Mignon. It's Lean yet succulent and elegant and has a melt-in-your-mouth texture, subtle flavor, and compact shape.

Slow roast and reverse sear, or grill, the tenderloin is a favorite for special gatherings and holiday meals. These half tenderloins average about 2 pounds each. 

Our cattle are treated ethically, pasture-raised, we never use hormones, steroids, or antibiotics.
