Cube steak is cut from the top round. These are steaks that are run through a mechanical cubing tenderizer and intended for southern country fried cooking.
Cube steak can be braised, pan-fried, or sautéed. It can even be baked in a casserole or cooked up long and slow in a slow cooker. Cube steak is best when fried using an egg wash, flour, and panko. Fry for 2-3 minutes per side depending upon size and number of steaks in the pan. Use at least 2 inches of healthy fry oil.
